Barbecue Cups

I know this isn't writing related, but you're all smart people I thought you might enjoy learning a new recipe. You may have heard me mention these before, but now, I present to you the secret recipe of...

Barbecue Cups!

Ingredients
  • 1 Pillsbury® can Grands Flaky Layers

  • 1.25 pounds ground beef (90% lean)

  • 1/4 to 1/3 large Spanish onion chopped

  • 3/4 cup of Baby Ray’s Chipotle Honey Barbecue Sauce

  • 1/4 cup light brown sugar

  • Mozzarella cheese


Cooking Instructions
  1. Brown ground beef and chopped onion together.

  2. Drain fat.

  3. Add brown sugar and BBQ sauce to beef mix.

  4. Stir together.

  5. Open the can of Pillsbury® Grands Flaky Layers (the tube pops!).

  6. Separate the 8 biscuits (but only 6 cups; take two of the biscuits and make them too.

  7. Flatten the biscuits and put them in a 6-cup large muffin pan.

  8. Add the Barbecue mixture.

  9. Bake at 350 degrees for 10 minutes.

  10. Remove from oven and add the mozzarella cheese to top of the cups.

  11. Bake an additional 5-10 minutes.



Cups should be light brown and the cheese should be melted when finished. Makes 8 cups.

Spray the muffin pan with Pam or some similar oil. Place the biscuit directly on the pan and mold in a cup shape. It's easier if you have a Large Muffin muffin pan, but a regular muffin pan will suffice.
